Spinach, Mushroom and Swiss Baked Omelet

½ cup spinach

1 / 3 cup sliced mushrooms

6-8 eggs

1 / 3 cup milk

½ cup grated Swiss cheese

Black pepper

Nutmeg

Cook the mushrooms and spinach made it over medium heat until all liquid from spinach and mushrooms.

Whisk eggs, milk, pepper and nutmeg at high speed in a blender together. Mixing in a mixer, the eggs turn lightand fluffy. Pour the egg mixture into well greased oven proof, like an iron skillet or omelet pan.

Stir the egg mixture, mushrooms and spinach. Sprinkle over the top of Swiss cheese.

Bake at 325 degrees for 25 minutes or until eggs SET provides.

Muffin Biscuits

These are easy to make and cookies are always a favorite. They are crumbly and buttery in flavor.

1 3 / 4 cups flour

1 teaspoon salt

2 teaspoonsdouble-acting baking powder

6 tablespoons cold butter

1 cup milk

Flour, salt and yeast in a large bowl. Cut the butter with a pastry blender to the mix dry. Make a well in center and pour in the milk. Stir for a minute.

Fill well greased muffin tins of dough to make cookies shapely.

Bake until golden at 400 degrees for 20-25 minutes or until they are not.

Serve hot with butter.
