Before you say ick! "I do not want to remember with turnip greens. But why not?
This soup is thick and rich and healthy and is a favorite in our CSA, Crazy Daisy Farm. This is not an original recipe, but the source is unknown. I see a discussion on Radish Top Soup from "The Origins of Fruit and Vegetables" by Jonathan Roberts and the same or a similar recipe on many other websites.
Radish Top Soup
Total cooking and preparation: 1Hours
Ingredients
2 tbsp. Butter
1 large onion, chopped
2 medium potatoes, cut into slices
4 cups first green radish
4 cups chicken broth
1 / 2 cup heavy cream
5 radishes, sliced
Butter, melted in a saucepan over medium heat. Mix the onion and fry until soft. Mix the potatoes and radish greens. And mix well to coat with butter. Add the chicken broth. Bring the mixture to a boil. Reduce heat and simmer 30 minutes.
Let the soup cool slightly.Transfer to a blender and process until smooth type. You can also give a food processor or hand blender right in the pan. As always, if carefully with a non-stick pan, a blender, so as not to scratch the bottom of the pan.
If you use the blender of food processor, return the soup to the pot. Add the cream. Cook over low heat and stir until well blended. Do not boil or too hot or it couldcurdle the cream.
Serve with slices of radish and a crusty bread. If you do not make bread for themselves, finding local resources for artisans breads. Many of the cooperatives that have in the house bakeries producing bread incredible. Wire connections with local fresh produce and bread. Enjoy.
